Description

Make fun chocolate pancake bites perfect for kids. These small treats are easy to eat.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. In a large bowl whisk together the flour sugar cocoa powder baking powder and salt.
  2. In a separate medium bowl whisk together the egg milk melted butter and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  4. If using fold in the mini chocolate chips.
  5. Heat a lightly greased griddle or use a mini muffin tin.
  6. Drop small spoonfuls of batter onto the hot griddle or fill mini muffin cups.
  7. Cook for 1-2 minutes per side on the griddle until bubbles form and edges are set. Flip and cook until golden brown.
  8. For mini muffin tins bake at 350°F (175°C) for 10-12 minutes or until cooked through.
  9. Serve warm.
