Make fun chocolate pancake bites perfect for kids. These small treats are easy to eat.
Ingredients

- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 cup milk
- 2 tablespoons melted butter or vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips (optional)
Instructions
- In a large bowl whisk together the flour sugar cocoa powder baking powder and salt.
- In a separate medium bowl whisk together the egg milk melted butter and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
- If using fold in the mini chocolate chips.
- Heat a lightly greased griddle or use a mini muffin tin.
- Drop small spoonfuls of batter onto the hot griddle or fill mini muffin cups.
- Cook for 1-2 minutes per side on the griddle until bubbles form and edges are set. Flip and cook until golden brown.
- For mini muffin tins bake at 350°F (175°C) for 10-12 minutes or until cooked through.
- Serve warm.
Notes
- Adjust sweetness to your preference.
- Serve with syrup fruit or whipped cream.
- Store leftovers in an airtight container.
