Ingredients

  • 1 lb boneless, skinless chicken breasts or tenders
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 6 cups chopped romaine lettuce
  • 1 cup croutons (store-bought or homemade)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup kid-friendly Caesar dressing (store-bought or homemade)
  • Optional: cherry tomatoes, cucumber slices, or other preferred veggies

Instructions

  1. Preheat oven to 375°F (190°C) or heat a large skillet over medium-high heat.
  2. Cut chicken into 1-inch pieces. In a bowl, toss chicken with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. If baking, spread chicken in a single layer on a baking sheet. Bake for 15-20 minutes, or until cooked through and no longer pink. If using a skillet, cook chicken for 5-7 minutes, stirring occasionally, until cooked through and lightly browned.
  4. While chicken cooks, prepare the salad bowls. Divide chopped romaine lettuce among 4 individual bowls.
  5. Once chicken is cooked, let it cool slightly.
  6. Top each salad bowl with cooked chicken, croutons, and grated Parmesan cheese.
  7. Drizzle each bowl with kid-friendly Caesar dressing.
