Instructions
- In a medium bowl, combine the shredded chicken, mashed avocado, mayonnaise (or Greek yogurt), and lime juice.
- Stir until well combined. If using, add a pinch of salt and pepper to taste.
- If desired, mix in any optional add-ins like shredded cheese or finely grated vegetables.
- Lay out the tortillas. Spread an even layer of the chicken and avocado mixture onto each tortilla.
- Roll up the tortillas tightly. You can cut them in half or into smaller pinwheels for little hands.
- Serve immediately or pack for a healthy lunch.
