Ingredients

  • 6 slices whole wheat bread
  • 2 tablespoons chia seeds
  • 1 cup mixed berries (fresh or frozen)
  • 12 tablespoons maple syrup or honey (adjust to taste)
  • 1/4 cup water
  • Cooking spray or butter

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 6-cup muffin tin with cooking spray or butter.
  2. Flatten each bread slice with a rolling pin. Using a round cookie cutter or a glass, cut out circles from each bread slice.
  3. Press each bread circle into the prepared muffin tin cups, forming a cup shape.
  4. Bake for 5-7 minutes, or until the bread cups are lightly golden and crisp. Remove from oven and let cool slightly.
  5. While the toast cups bake, prepare the chia jam. In a small saucepan, combine mixed berries and water. Bring to a simmer over medium heat, mashing the berries with a fork as they soften.
  6. Stir in the chia seeds and maple syrup (or honey). Continue to cook for 2-3 minutes, stirring constantly, until the jam thickens. Remove from heat and let cool. It will thicken further as it cools.
  7. Spoon the chia jam into the cooled toast cups.
  8. Serve immediately or store in an airtight container in the refrigerator for up to 2 days.
