- 2 large eggs
- 2 tablespoons milk (any kind)
- Pinch of salt
- Pinch of black pepper
- 1/4 cup finely chopped fresh spinach
- 2 tablespoons shredded cheese (cheddar, mozzarella, or a blend work well)
- Butter or oil for cooking
Instructions
- In a small bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Stir in the finely chopped spinach.
- Heat a small non-stick pan over medium heat and add a little butter or oil.
- Pour the egg mixture into the pan, swirling to coat the bottom evenly, like making a thin omelet or crepe.
- Cook for 2-3 minutes, or until the edges are set and the center is almost cooked through.
- Sprinkle the cheese over one half of the omelet.
- Carefully fold the other half of the omelet over the cheese.
- Cook for another 1-2 minutes, or until the cheese is melted and the omelet is cooked through.
- Slide the omelet onto a cutting board. Let it cool slightly.
- Cut the omelet into bite-sized rolls or strips.
- Serve warm.
Notes
- Make sure the spinach is chopped very finely, especially for younger kids.
- You can add other finely chopped vegetables like bell peppers or mushrooms if your child enjoys them.
- These can be served warm or at room temperature, making them great for lunchboxes.
- Leftovers can be stored in the refrigerator for up to 2 days and reheated gently.
