Easy and delicious cheesy black bean quesadillas perfect for kids.
Ingredients

- 4 small flour tortillas
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup shredded cheddar cheese
- 1/4 cup salsa (optional)
- 1 tablespoon butter or oil
Instructions
- Lay two tortillas flat.
- Spread half of the black beans over each tortilla, leaving a small border.
- Sprinkle half of the cheese over the beans on each tortilla.
- Top each with another tortilla.
- Heat butter or oil in a non-stick skillet over medium heat.
- Carefully place one quesadilla in the skillet.
- Cook for 3-4 minutes per side, until golden brown and cheese is melted.
- Repeat with the second quesadilla.
- Let cool slightly, then cut into wedges.
- Serve with salsa for dipping, if desired.
Notes
- Mash the black beans slightly for younger children.
- Add a pinch of cumin or chili powder for extra flavor.
- You can use other types of cheese like Monterey Jack or a Mexican blend.
- These are great for using up leftover cooked chicken or corn.
