Easy and delicious overnight oats packed with carrot cake flavor, perfect for a quick and healthy kid-friendly breakfast.


Ingredients

  • 1/2 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup or honey (optional, adjust to taste)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup grated carrots
  • 2 tablespoons raisins or chopped dates (optional)
  • 2 tablespoons chopped walnuts or pecans (optional, for older kids)

Instructions

  1. In a jar or container, combine the rolled oats, milk, chia seeds, maple syrup (if using), cinnamon, and nutmeg.
  2. Stir well to ensure everything is combined and there are no dry clumps of oats or chia seeds.
  3. Add the grated carrots and raisins or dates (if using). Stir again.
  4. If using nuts, add them now and stir gently.
  5. Seal the jar or container and refrigerate for at least 4 hours, preferably overnight.
  6. In the morning, stir the oats and add a splash more milk if needed to reach your desired consistency.
  7. Serve cold.

Notes

  • Adjust the sweetness based on your child’s preference.
  • You can add other mix-ins like shredded coconut or chopped apple.
  • For younger children, you may want to omit the nuts or chop them very finely.
