Ingredients

  • 2 cups chopped broccoli florets
  • 4 tablespoons unsalted butter
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk (whole or 2%)
  • 1/2 cup all-purpose flour
  • 2 cups shredded cheddar cheese (mild or sharp)
  • Salt and pepper to taste

Instructions

  1. Steam or lightly boil the broccoli florets until tender, about 5-7 minutes. Set aside.
  2. In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Gradually whisk in the flour until a smooth paste forms (this is a roux). Cook for 1-2 minutes, stirring constantly.
  4. Slowly pour in the vegetable broth, whisking constantly to avoid lumps. Bring the mixture to a simmer, stirring occasionally.
  5. Reduce heat to low. Stir in the milk and the cooked broccoli.
  6. Add the shredded cheddar cheese, stirring until it is completely melted and the soup is smooth and creamy.
  7. Season with salt and pepper to taste.
  8. For picky eaters or smoother texture, you can use an immersion blender or transfer batches to a regular blender to partially or fully blend the soup.
  9. Serve warm.
