- 2 cups chopped broccoli florets
- 4 tablespoons unsalted butter
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (whole or 2%)
- 1/2 cup all-purpose flour
- 2 cups shredded cheddar cheese (mild or sharp)
- Salt and pepper to taste
Instructions
- Steam or lightly boil the broccoli florets until tender, about 5-7 minutes. Set aside.
- In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Gradually whisk in the flour until a smooth paste forms (this is a roux). Cook for 1-2 minutes, stirring constantly.
- Slowly pour in the vegetable broth, whisking constantly to avoid lumps. Bring the mixture to a simmer, stirring occasionally.
- Reduce heat to low. Stir in the milk and the cooked broccoli.
- Add the shredded cheddar cheese, stirring until it is completely melted and the soup is smooth and creamy.
- Season with salt and pepper to taste.
- For picky eaters or smoother texture, you can use an immersion blender or transfer batches to a regular blender to partially or fully blend the soup.
- Serve warm.
