Description

Make mealtime easy with these simple broccoli cheese quesadillas. They are a quick and tasty way to get kids to eat their veggies. Perfect for breakfast or a snack, even picky eaters might give these a try.

Ingredients

Scale
  • 4 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely chopped cooked broccoli
  • 1 tablespoon butter or oil

Instructions

  1. Steam or boil broccoli until tender. Chop the broccoli into very small pieces.
  2. In a bowl, mix the chopped broccoli with the shredded cheese.
  3. Lay out the tortillas on a flat surface. Spread the broccoli and cheese mixture onto one half of each tortilla.
  4. Fold the tortillas in half, pressing gently.
  5. Heat butter or oil in a non-stick pan over medium heat.
  6. Carefully place the folded quesadillas in the hot pan.
  7. Cook for 3-4 minutes on each side, until the tortillas are golden brown and the cheese is melted and gooey.
  8. Remove from pan, cut into triangles, and serve warm.

Notes

  • Chop the broccoli extra fine for toddlers or very picky eaters.
  • You can use a mix of cheeses like Monterey Jack or mozzarella.
  • Serve with a side of salsa or sour cream if your kids like dipping.
