- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped dried fruit (raisins, cranberries, apricots)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the oats, flour, brown sugar, baking powder, cinnamon, and salt.
- In a separate medium bowl, whisk together the applesauce, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped dried fruit.
- Drop spoonfuls of dough onto the prepared baking sheet, leaving some space between cookies.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

- You can substitute other dried fruits like chopped dates or figs.
