Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped dried fruit (raisins, cranberries, apricots)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the oats, flour, brown sugar, baking powder, cinnamon, and salt.
  3. In a separate medium bowl, whisk together the applesauce, melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped dried fruit.
  6. Drop spoonfuls of dough onto the prepared baking sheet, leaving some space between cookies.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
