Description

Easy and fun breakfast burritos that are perfect for kids. These roll-ups are quick to make and customizable.


Ingredients

Scale
  • 4 small flour tortillas
  • 4 large eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 1/4 cup shredded cheddar cheese
  • Optional fillings: cooked and crumbled bacon or sausage, diced bell peppers, spinach

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper.
  2. Heat a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until scrambled and cooked through.
  3. Warm the tortillas according to package directions (microwave for a few seconds or warm in a dry skillet).
  4. Place a portion of scrambled eggs onto each tortilla.
  5. Sprinkle cheese over the eggs and add any other desired fillings.
  6. Tightly roll up each tortilla from one edge to the other.
  7. Cut each roll-up in half or into smaller pieces for easier handling by little hands.
  8. Serve immediately.
