Description

Whip up these easy Kid-Friendly Blueberry Breakfast Bars. They are a quick, nutritious option perfect for busy mornings or snacks. My kids, Leo and Mia, love them, and you will too!


Ingredients

  • 1 and 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1 tablespoon cornstarch
  • 2 tablespoons lemon juice (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix together the rolled oats, flour, brown sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Stir until crumbs form.
  5. Press about two-thirds of the crumb mixture evenly into the prepared baking pan.
  6. In a small bowl, toss the blueberries with cornstarch and lemon juice (if using).
  7. Spread the blueberry mixture evenly over the crust in the pan.
  8. Crumble the remaining third of the oat mixture over the blueberries.
  9. Bake for 30-35 minutes, or until the top is golden brown and the blueberries are bubbly.
  10. Let the bars cool completely in the pan on a wire rack before cutting into squares.

Notes

  • Store cooled bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
  • For a make-ahead option, bake the bars, cool completely, cut, and freeze in a single layer before transferring to a freezer bag. Thaw at room temperature or microwave briefly.
