- 1 and 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen blueberries
- 1 tablespoon cornstarch
- 2 tablespoons lemon juice (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mix together the rolled oats, flour, brown sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir until crumbs form.
- Press about two-thirds of the crumb mixture evenly into the prepared baking pan.
- In a small bowl, toss the blueberries with cornstarch and lemon juice (if using).
- Spread the blueberry mixture evenly over the crust in the pan.
- Crumble the remaining third of the oat mixture over the blueberries.
- Bake for 30-35 minutes, or until the top is golden brown and the blueberries are bubbly.
- Let the bars cool completely in the pan on a wire rack before cutting into squares.
Notes
- Store cooled bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
- For a make-ahead option, bake the bars, cool completely, cut, and freeze in a single layer before transferring to a freezer bag. Thaw at room temperature or microwave briefly.
- Try substituting other berries or chopped fruit like apples or peaches.
