Description

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder

  • 1 cup milk

  • 1 ½ cups mixed berries (fresh or frozen)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the egg, milk, melted butter or oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in the mixed berries.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. Slice and serve. This cake is delicious warm or at room temperature.

Notes

  • For picky eaters, try using just one type of berry they already like, or mix in a small amount of a new berry.
