Description
These Kid-Friendly Avocado Fudge Bites are a simple and delicious treat. They are quick to prepare and a great way to sneak in some healthy fats for your little ones.
Ingredients
Scale
- 1 ripe avocado, peeled and pitted
- 1/2 cup cocoa powder
- 1/4 cup maple syrup (or honey for children over 1 year)
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: 2 tablespoons mini chocolate chips or sprinkles for topping
Instructions
- In a food processor or high-speed blender, combine the avocado, cocoa powder, maple syrup, vanilla extract, and salt.
- Blend until completely smooth and creamy, scraping down the sides as needed. The mixture should resemble a thick fudge.
- Spoon the mixture into a small parchment-lined dish or a silicone mold.
- If desired, sprinkle with mini chocolate chips or sprinkles.
- Refrigerate for at least 30 minutes, or until firm.
- Once firm, cut into small bite-sized pieces.
- Serve cold and enjoy! Store any leftovers in an airtight container in the refrigerator.
Notes
- For a richer flavor, you can add a tablespoon of almond butter or peanut butter to the mixture.
- If the mixture is too thick to blend, add a tablespoon of milk (dairy or non-dairy) at a time until it reaches the desired consistency.
- These bites are perfect for lunchboxes or as a quick after-school snack.
- My son, Leo, was skeptical at first, but once he tried them, he asked for more! Even Mia, my pickier eater, enjoyed them with a few sprinkles on top.
