- 2 cups rolled oats
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup brown sugar
- 1 large egg
- 1 1/2 cups milk
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- 1 cup peeled and diced apples
- 1/4 cup all-purpose flour
- 2 tbsp brown sugar
- 1/4 tsp ground cinnamon
- 2 tbsp cold butter, cut into small pieces
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
- In a large bowl, mix together the oats, baking powder, cinnamon, salt, and 1/4 cup brown sugar.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
- Pour the mixture into the prepared baking dish.
- In a small bowl, combine the flour, 2 tbsp brown sugar, and 1/4 tsp cinnamon for the crumb topping. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the oatmeal.
- Bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set.
- Let cool slightly before serving.
Notes
- You can use any type of apple you prefer, like Gala, Fuji, or Honeycrisp.
- Add a handful of raisins or chopped nuts (if no allergies) with the apples for extra flavor and texture.
- This baked oatmeal can be made ahead of time and reheated.
