Description

Easy and delicious baked oatmeal with apples and a crumb topping, perfect for a kid-friendly breakfast.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 1/2 cups milk
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 cup peeled and diced apples
  • 1/4 cup all-purpose flour
  • 2 tbsp brown sugar
  • 1/4 tsp ground cinnamon
  • 2 tbsp cold butter, cut into small pieces

Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
  2. In a large bowl, mix together the oats, baking powder, cinnamon, salt, and 1/4 cup brown sugar.
  3. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
  5. Pour the mixture into the prepared baking dish.
  6. In a small bowl, combine the flour, 2 tbsp brown sugar, and 1/4 tsp cinnamon for the crumb topping. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  7. Sprinkle the crumb topping evenly over the oatmeal.
  8. Bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set.
  9. Let cool slightly before serving.

Notes

  • You can use any type of apple you prefer, like Gala, Fuji, or Honeycrisp.
  • Add a handful of raisins or chopped nuts (if no allergies) with the apples for extra flavor and texture.
  • This baked oatmeal can be made ahead of time and reheated.
