Description

These kid-friendly air-fried zucchini sticks are a simple and delicious way to get more vegetables into your children’s diet. They are crispy, flavorful, and perfect for even picky eaters.

Ingredients

Scale
  • 2 medium zucchini, ends trimmed, cut into sticks
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • 2 tablespoons grated Parmesan cheese (optional)
  • Cooking spray or 1 tablespoon olive oil

Instructions

  1. In a shallow dish, combine the flour, garlic powder, salt, and pepper.
  2. In another shallow dish, beat the egg.
  3. In a third shallow dish, combine the panko breadcrumbs and Parmesan cheese (if using).
  4. Dredge each zucchini stick in the flour mixture, shaking off any excess.
  5. Dip the floured zucchini stick into the beaten egg, ensuring it’s fully coated.
  6. Roll the egg-coated zucchini stick in the panko mixture, pressing gently to adhere the breadcrumbs.
  7. Arrange the breaded zucchini sticks in a single layer in your air fryer basket, ensuring not to overcrowd. You may need to cook in batches.
  8. Lightly spray the zucchini sticks with cooking spray or drizzle with olive oil.
  9. Air fry at 375°F (190°C) for 10-15 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve immediately with your child’s favorite dipping sauce.

Notes

  • For extra crispiness, ensure the zucchini sticks are not too thick.
  • If your air fryer is small, cook in batches to avoid overcrowding, which can lead to soggy zucchini.
  • Leo loves these with a side of ketchup, while Mia prefers them plain or with a little ranch dressing!
  • These are great as a side dish, a snack, or even a fun appetizer.
