Scale
- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, melted
- 4 ounces unsweetened baking chocolate, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups erythritol or your preferred keto sweetener
- 1 cup chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan, or line it with parchment paper.
- In a medium bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.
- In a large bowl, combine the melted butter and melted unsweetened baking chocolate. Stir until smooth.
- Whisk in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the erythritol (or sweetener) to the wet ingredients, mixing until well combined.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Fold in the chopped walnuts.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- Let the brownies cool completely in the pan before cutting into squares.
Notes
- For an even richer chocolate flavor, use a combination of unsweetened baking chocolate and dark chocolate (with a high cocoa content).
- Ensure your unsweetened baking chocolate is truly unsweetened to keep the carb count low.
- You can substitute pecans for walnuts if you prefer.
- Store cooled brownies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
