Description

Make light, fluffy, and savory cloud bread flavored with everything bagel seasoning. This recipe is strictly ketogenic and makes a great low-carb bread substitute.

Ingredients

Scale
  • 4 large eggs, separated
  • 4 oz cream cheese, softened
  • 1/4 tsp cream of tartar
  • 1/4 tsp salt
  • 2 Tbsp Everything Bagel Seasoning, plus extra for topping

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, beat the egg yolks with the softened cream cheese until completely smooth. Set aside.
  3. In a separate, clean, dry bowl, beat the egg whites with the cream of tartar until stiff peaks form. This takes about 3 to 5 minutes with an electric mixer.
  4. Gently fold the cream cheese and yolk mixture into the stiff egg whites. Do not overmix; stop when just combined.
  5. Gently fold in the 1/4 tsp of salt and 2 tablespoons of Everything Bagel Seasoning.
  6. Spoon 6 equal mounds of the batter onto the prepared baking sheet. They will spread slightly.
  7. Sprinkle the tops of the mounds generously with extra Everything Bagel Seasoning.
  8. Bake for 25 to 30 minutes, or until the tops are lightly golden brown and the bread is set.
  9. Turn off the oven, crack the door open slightly, and let the bread cool inside the oven for 10 minutes. This helps prevent collapse.
  10. Remove from the oven and cool completely on a wire rack before slicing or serving.

Notes

  • Use room temperature cream cheese for the smoothest yolk mixture.
  • Ensure your mixing bowl for the egg whites is completely free of grease or water.
  • If you prefer a sturdier bread, you can bake for 5 minutes longer, but it will be less fluffy.
