Description

Make this quick, low-carb taco skillet featuring seasoned ground meat, a creamy cheese sauce, and cauliflower rice for a satisfying weeknight keto dinner.

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb ground beef or ground turkey
  • 1 small onion, chopped
  • 2 tbsp low-carb taco seasoning
  • 1 (10 oz) bag frozen cauliflower rice
  • 1/2 cup chicken broth
  • 4 oz cream cheese, cubed
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup sour cream (full fat)
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, sliced avocado

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground meat and chopped onion. Cook until the meat is browned and the onion is soft, breaking up the meat as it cooks. Drain any excess grease.
  2. Stir in the taco seasoning and cook for 1 minute until fragrant.
  3. Add the frozen cauliflower rice and chicken broth to the skillet. Bring the mixture to a simmer, then reduce heat to medium-low. Cover and cook for 5 minutes, stirring occasionally, until the cauliflower rice softens slightly.
  4. Uncover the skillet. Add the cream cheese cubes and heavy cream. Stir constantly until the cream cheese melts and creates a smooth, creamy sauce coating the meat and rice mixture.
  5. Stir in the shredded cheese until fully melted and incorporated. Remove the skillet from the heat.
  6. Stir in the sour cream until combined. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve immediately, topped with cilantro or avocado if desired.

Notes

  • To prevent the cauliflower rice from becoming watery, cook it uncovered during the final stages to allow excess moisture to evaporate before adding the dairy.
  • Use full-fat dairy products to maintain ketogenic macros and achieve the best creamy texture.
  • You can substitute ground turkey for ground beef.
