Description

A simple recipe for a rich, creamy, and flavorful baked chicken dish that fits strict ketogenic dietary needs.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 4 ounces cream cheese, cubed
  • 1 cup grated Parmesan cheese, divided
  • 1/2 cup shredded Asiago cheese (optional, for topping)
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×13 inch baking dish.
  2. Season the chicken breasts on both sides with salt, pepper, and garlic powder. Place the seasoned chicken in the prepared baking dish.
  3. In a medium saucepan over medium heat, combine the heavy cream, minced garlic, and chicken broth. Heat until simmering, stirring occasionally.
  4. Reduce the heat to low. Add the cubed cream cheese and stir until it is completely melted and the sauce is smooth.
  5. Stir in 3/4 cup of the grated Parmesan cheese until it is fully incorporated into the sauce. Remove the pan from the heat.
  6. Pour the creamy sauce evenly over the chicken breasts in the baking dish.
  7. Distribute the chopped spinach around and under the chicken pieces in the sauce.
  8. Sprinkle the remaining 1/4 cup of Parmesan cheese and the Asiago cheese (if using) over the top of the chicken and sauce.
  9. Bake for 25 to 30 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the topping is golden brown and bubbly.
  10. Let the dish rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • To prevent the sauce from separating, make sure the cream cheese is fully melted before adding the grated Parmesan cheese. Do not let the sauce boil rapidly once the cheese is added.
  • For extra flavor, you can sear the chicken breasts in the olive oil for 2 minutes per side before placing them in the baking dish.
  • Use high-quality, freshly grated Parmesan cheese for the best melting texture and flavor. Pre-shredded cheese often contains anti-caking agents that can affect creaminess.
