Description

Prepare a flavorful, low-carb chicken breast stuffed with a creamy spinach and cheese filling, baked until golden.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, finely chopped
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a medium bowl, combine the softened cream cheese, chopped spinach, mozzarella cheese, Parmesan cheese, and minced garlic. Mix until well combined.
  3. Take one chicken breast and carefully cut a deep pocket into the thickest side, being careful not to cut all the way through.
  4. Spoon one-fourth of the cheese and spinach mixture into the pocket of each chicken breast. Secure the opening with toothpicks if necessary.
  5. Rub the outside of the stuffed chicken breasts with olive oil. Season the exterior with salt, pepper, and garlic powder.
  6. Place the stuffed chicken breasts in the prepared baking dish.
  7. Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  8. Remove the toothpicks before serving.

Notes

  • To keep the chicken moist, do not overbake. Use a meat thermometer for accuracy.
  • For a crispier top, you can briefly place the chicken under the broiler for the last 2 minutes, watching closely.
  • If you prefer a different cheese, Gruyère or Monterey Jack work well in the filling.
