- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, finely chopped
- 4 ounces cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- In a medium bowl, combine the softened cream cheese, chopped spinach, mozzarella cheese, Parmesan cheese, and minced garlic. Mix until well combined.
- Take one chicken breast and carefully cut a deep pocket into the thickest side, being careful not to cut all the way through.
- Spoon one-fourth of the cheese and spinach mixture into the pocket of each chicken breast. Secure the opening with toothpicks if necessary.
- Rub the outside of the stuffed chicken breasts with olive oil. Season the exterior with salt, pepper, and garlic powder.
- Place the stuffed chicken breasts in the prepared baking dish.
- Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
- Remove the toothpicks before serving.
Notes
- To keep the chicken moist, do not overbake. Use a meat thermometer for accuracy.
- For a crispier top, you can briefly place the chicken under the broiler for the last 2 minutes, watching closely.
- If you prefer a different cheese, Gruyère or Monterey Jack work well in the filling.
