Description

Make a rich, creamy, and satisfying soup that tastes like a cheeseburger without the carbs. This recipe is strictly ketogenic and cooks quickly in one pot.


Ingredients

  • 1 pound ground beef
  • 4 slices bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon dry mustard powder
  • 1 teaspoon Worcestershire sauce (check for low/no sugar)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, cubed
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Optional: 1/2 cup chopped dill pickles for topping

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off excess grease.
  2. Add the chopped onion to the pot with the beef and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the beef broth. Add the dry mustard powder, Worcestershire sauce, salt, and pepper. Bring the mixture to a simmer.
  5. Reduce the heat to low. Add the cubed cream cheese, stirring constantly until it is completely melted and the soup is smooth.
  6. Stir in the heavy cream. Heat through gently, but do not boil.
  7. Remove the pot from the heat. Gradually stir in the cheddar cheese and Monterey Jack cheese until fully melted and incorporated, creating a creamy texture.
  8. Stir in half of the crumbled bacon.
  9. Ladle the soup into bowls. Top each serving with the remaining bacon and optional chopped pickles.

  • For the best texture, ensure the cream cheese is at room temperature before adding it to the soup.
  • If you prefer a thicker soup, you can add 1 tablespoon of xanthan gum mixed with 2 tablespoons of cold water after the broth is simmering, stirring well before adding the cheese.
