- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup uncooked white rice, rinsed
- 1 cup chicken broth
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 packet taco seasoning
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños
Instructions
- Set your Instant Pot to the Sauté function. Add olive oil and heat.
- Add chicken pieces and cook until lightly browned, about 2-3 minutes. Season with salt and pepper.
- Turn off the Sauté function. Add the rinsed rice, chicken broth, diced tomatoes with green chilies, taco seasoning, chili powder, cumin, garlic powder, and onion powder to the pot. Stir to combine.
- Secure the lid and set the valve to sealing. Cook on high pressure for 5 minutes.
- Once the cooking cycle is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick release for any remaining pressure.
- Open the lid and stir the chicken and rice. If the mixture is too liquidy, set the Instant Pot to Sauté and cook for a few more minutes until it thickens.
- Serve hot, with your favorite optional toppings.
Notes
- Rinsing the rice helps to remove excess starch, preventing it from becoming too sticky.
- Adjust the chili powder and cumin to your preference for spice level.
- If using frozen chicken, you may need to add a few extra minutes to the pressure cooking time.
