Make tender, flavorful BBQ pulled chicken quickly using your Instant Pot, perfect for serving on sandwiches.

- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup chicken broth
- 1 cup your favorite BBQ sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 hamburger buns
- Optional: Coleslaw for topping
Instructions
- Place the chicken in the inner pot of your Instant Pot.
- In a separate bowl, whisk together the chicken broth, BBQ sauce, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Pour the sauce mixture over the chicken in the Instant Pot.
- Secure the lid and set the vent to Sealing.
- Cook on High Pressure (Manual/Pressure Cook) for 10 minutes.
- Allow for a Natural Pressure Release (NPR) for 5 minutes, then carefully switch the valve to Venting for a Quick Release (QR) of any remaining pressure.
- Remove the chicken from the pot and place it in a large bowl.
- Shred the chicken using two forks.
- Return the shredded chicken to the Instant Pot, stir well to coat with the remaining sauce, and set the pot to Sauté mode (Low or Normal). Cook for 3 to 5 minutes, stirring occasionally, until the sauce thickens slightly and coats the chicken well.
- Serve the hot BBQ pulled chicken immediately on hamburger buns, topped with coleslaw if desired.
Notes
- Using chicken thighs results in moister pulled chicken compared to breasts.
- If you prefer a thicker sauce, remove the chicken before shredding and let the remaining liquid simmer on Sauté mode until reduced by about one-third before returning the shredded meat.
- This recipe works well as a slow cooker swap; cook on low for 6-8 hours if you do not use the Instant Pot.
