Description

Make tender, flavorful BBQ pulled chicken quickly using your Instant Pot, perfect for serving on sandwiches.


Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth
  • 1 cup your favorite BBQ sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 hamburger buns
  • Optional: Coleslaw for topping

Instructions

  1. Place the chicken in the inner pot of your Instant Pot.
  2. In a separate bowl, whisk together the chicken broth, BBQ sauce, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Pour the sauce mixture over the chicken in the Instant Pot.
  4. Secure the lid and set the vent to Sealing.
  5. Cook on High Pressure (Manual/Pressure Cook) for 10 minutes.
  6. Allow for a Natural Pressure Release (NPR) for 5 minutes, then carefully switch the valve to Venting for a Quick Release (QR) of any remaining pressure.
  7. Remove the chicken from the pot and place it in a large bowl.
  8. Shred the chicken using two forks.
  9. Return the shredded chicken to the Instant Pot, stir well to coat with the remaining sauce, and set the pot to Sauté mode (Low or Normal). Cook for 3 to 5 minutes, stirring occasionally, until the sauce thickens slightly and coats the chicken well.
  10. Serve the hot BBQ pulled chicken immediately on hamburger buns, topped with coleslaw if desired.

Notes

  • Using chicken thighs results in moister pulled chicken compared to breasts.
  • If you prefer a thicker sauce, remove the chicken before shredding and let the remaining liquid simmer on Sauté mode until reduced by about one-third before returning the shredded meat.
  • This recipe works well as a slow cooker swap; cook on low for 6-8 hours if you do not use the Instant Pot.
