Description

A simple recipe for a refreshing, non-alcoholic tropical drink featuring pineapple and coconut flavors served over ice.

Ingredients

Scale
  • 1 cup pineapple juice, chilled
  • 1/2 cup unsweetened coconut milk (canned or carton)
  • 1/4 cup crushed ice
  • 1 tablespoon lime juice, fresh
  • 1 teaspoon simple syrup (optional)
  • Garnish: Pineapple wedge and toasted coconut flakes

Instructions

  1. Combine the pineapple juice, coconut milk, crushed ice, and lime juice in a blender.
  2. Blend on high speed until the mixture is smooth and slushy.
  3. Taste the mixture; add simple syrup if you prefer more sweetness. Blend briefly to incorporate.
  4. Pour the mixture into a tall glass filled with fresh ice.
  5. Garnish the rim with a pineapple wedge and sprinkle toasted coconut flakes on top.
  6. Serve immediately.

Notes

  • For a fizzy version, skip the blending and stir the juices with ice, then top with 1/4 cup of club soda or sparkling water.
  • Use frozen pineapple chunks instead of ice for a thicker, colder texture.
  • To toast coconut flakes, spread them on a dry skillet over medium heat and stir constantly until golden brown.
