Description

Easy and fun Hummus & Veggie Rainbow Skewers, perfect for kids’ lunchboxes or snacks. A great way to encourage kids to eat more vegetables.

Ingredients

Scale
  • 1 cup hummus
  • Assorted colorful vegetables (cherry tomatoes, cucumber, bell peppers – red, yellow, orange, green, purple), cut into bite-sized pieces
  • Whole wheat pita bread or crackers, for serving
  • Small wooden skewers

Instructions

  1. Prepare the vegetables by washing and cutting them into bite-sized shapes that are easy to thread onto skewers.
  2. Carefully thread the colorful vegetable pieces onto the wooden skewers, creating a ‘rainbow’ effect with different colors.
  3. Arrange the vegetable skewers on a plate or in a lunchbox.
  4. Serve with a side of hummus for dipping and whole wheat pita bread or crackers.

Notes

  • Adjust the vegetable choices based on your child’s preferences and what’s in season.
  • For younger children, you can break the skewers in half or use shorter skewers for safety.
  • Prep the veggies ahead of time for quick assembly in the morning.
