Description

Create a hearty and comforting Homemade Reuben Bake Casserole. This recipe layers corned beef, tangy sauerkraut, melted Swiss cheese, and dressing over slices of rye bread before baking it into a gooey, flavorful dish perfect for a family meal. It brings the classic deli sandwich experience into an easy-to-serve casserole format.

Ingredients

Scale
  • 1 pound corned beef, shredded or chopped
  • 1 (16 ounce) jar sauerkraut, drained well
  • 1 cup Thousand Island dressing
  • 8 slices rye bread, cut into cubes
  • 1 cup Swiss cheese, shredded
  • 1/4 cup butter, melted

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, gently toss the shredded corned beef and drained sauerkraut together.
  3. Spread half of the rye bread cubes evenly over the bottom of the prepared baking dish.
  4. Spread half of the corned beef and sauerkraut mixture over the layer of bread.
  5. Drizzle half of the Thousand Island dressing over the meat and sauerkraut layer.
  6. Sprinkle half of the shredded Swiss cheese over the dressing.
  7. Repeat the layers: remaining rye bread cubes, remaining meat mixture, remaining dressing, and remaining Swiss cheese.
  8. Brush the melted butter evenly over the top layer of cheese.
  9. Bake for 25 to 30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  10. Let the bake rest for 5 minutes before serving.

Notes

  • Squeeze the sauerkraut very dry after draining; excess moisture makes the bake soggy.
  • You can use caraway rye bread for a more traditional flavor.
  • Serve this bake with extra Thousand Island dressing on the side for dipping.
  • For a crispier top, you can briefly broil the casserole for the last minute, watching closely to prevent burning.
