- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts or thighs
- 1 large yellow onion, chopped
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 8 cups chicken broth
- 1 teaspoon salt, plus more to taste
- 1/2 teaspoon black pepper, plus more to taste
- 1 cup egg noodles
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Pour in chicken broth, salt, and pepper. Bring to a boil.
- Return chicken to the pot. Reduce heat, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
- Remove chicken from the pot and shred it with two forks. Return shredded chicken to the pot.
- Add egg noodles and cook according to package directions, usually 7-10 minutes, until tender.
- Stir in fresh parsley. Taste and adjust seasoning with salt and pepper if needed.
- Serve hot.
Notes
- For a richer broth, you can use chicken thighs.
- Feel free to add other vegetables like peas or corn.
- If you don’t have fresh parsley, dried parsley can be used, but use less (about 1 teaspoon).
