Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 large yellow onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 8 cups chicken broth
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper, plus more to taste
  • 1 cup egg noodles
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Pour in chicken broth, salt, and pepper. Bring to a boil.
  4. Return chicken to the pot. Reduce heat, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
  5. Remove chicken from the pot and shred it with two forks. Return shredded chicken to the pot.
  6. Add egg noodles and cook according to package directions, usually 7-10 minutes, until tender.
  7. Stir in fresh parsley. Taste and adjust seasoning with salt and pepper if needed.
  8. Serve hot.

Notes

  • For a richer broth, you can use chicken thighs.
  • Feel free to add other vegetables like peas or corn.
  • If you don’t have fresh parsley, dried parsley can be used, but use less (about 1 teaspoon).
