Ingredients

  • 1 tablespoon olive oil
  • 1 cup leftover cooked ham, diced
  • 1 cup diced cooked potatoes (use leftover roasted potatoes if you have them)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 2 cloves garlic, minced
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 large eggs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced ham and cook until it starts to brown slightly, about 3 minutes.
  3. Add the diced potatoes, onion, and bell pepper to the skillet. Cook, stirring occasionally, until the vegetables soften and the potatoes get crispy edges, about 8 to 10 minutes.
  4. Stir in the minced garlic and smoked paprika. Cook for 1 minute until fragrant. Season with salt and pepper.
  5. Create four small wells in the hash mixture. Crack one egg into each well.
  6. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 4 to 6 minutes, depending on your preference.
  7. Remove from heat. Sprinkle with fresh parsley before serving immediately.

Notes

  • If you use raw potatoes instead of cooked leftovers, boil or microwave them until just tender before dicing and adding them to the skillet.
  • Feel free to add other leftover vegetables like cooked carrots or mushrooms.
