- 2 cups cooked ham, diced
- 2 cups potatoes, cooked and diced (leftover roasted or boiled work well)
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 2 tablespoons butter or oil
- Salt and pepper to taste
- Optional: 2-4 eggs for topping
Instructions
- Heat the butter or oil in a large skillet over medium heat.
- Add the chopped onion and bell pepper to the skillet. Sauté until softened, about 5 minutes.
- Add the diced potatoes to the skillet. Cook, stirring occasionally, until the potatoes are browned and slightly crispy, about 8-10 minutes.
- Stir in the diced ham. Cook until the ham is heated through and slightly caramelized, about 5 minutes.
- Season the hash generously with salt and pepper. Taste and adjust seasonings.
- If desired, create small wells in the hash and crack eggs into them. Cover the skillet and cook until the eggs reach your preferred doneness.
