- 6 large eggs
- 1/4 cup milk or heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 1/2 cup chopped yellow onion
- 1 cup chopped fresh spinach
- 1/2 cup dried cranberries
- 4 ounces Brie cheese, rind removed and cubed
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.
- Melt the butter in a 10-inch oven-safe skillet over medium heat.
- Add the onion to the skillet and cook until softened, about 3 minutes.
- Add the spinach and cook until wilted, about 2 minutes more.
- Distribute the cooked onion and spinach evenly across the bottom of the skillet.
- Sprinkle the dried cranberries over the vegetables.
- Dot the top evenly with the cubed Brie cheese.
- Carefully pour the egg mixture over the fillings in the skillet.
- Sprinkle the Parmesan cheese over the top.
- Transfer the skillet to the preheated oven.
- Bake for 20 to 25 minutes, or until the frittata is set in the center and lightly golden brown.
- Let stand for 5 minutes before slicing and serving.
Notes
- Feel free to use fresh cranberries if you chop them finely, but reduce the amount slightly.
- If you prefer a tangier flavor, substitute goat cheese for some of the Brie.
- This frittata tastes wonderful served warm or at room temperature for brunch.
