Description

Create a warm and inviting Holiday Frittata featuring the festive flavors of cranberries and creamy Brie. This dish brings joy and connection to your Christmas brunch table, perfect for rediscovering fun in the kitchen.


Ingredients

  • 6 large eggs
  • 1/4 cup milk or heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1/2 cup chopped yellow onion
  • 1 cup chopped fresh spinach
  • 1/2 cup dried cranberries
  • 4 ounces Brie cheese, rind removed and cubed
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.
  3. Melt the butter in a 10-inch oven-safe skillet over medium heat.
  4. Add the onion to the skillet and cook until softened, about 3 minutes.
  5. Add the spinach and cook until wilted, about 2 minutes more.
  6. Distribute the cooked onion and spinach evenly across the bottom of the skillet.
  7. Sprinkle the dried cranberries over the vegetables.
  8. Dot the top evenly with the cubed Brie cheese.
  9. Carefully pour the egg mixture over the fillings in the skillet.
  10. Sprinkle the Parmesan cheese over the top.
  11. Transfer the skillet to the preheated oven.
  12. Bake for 20 to 25 minutes, or until the frittata is set in the center and lightly golden brown.
  13. Let stand for 5 minutes before slicing and serving.

Notes

  • Feel free to use fresh cranberries if you chop them finely, but reduce the amount slightly.
  • If you prefer a tangier flavor, substitute goat cheese for some of the Brie.
  • This frittata tastes wonderful served warm or at room temperature for brunch.
