Ingredients

  • 6 large egg whites
  • 1 whole wheat or low-carb tortilla
  • 1/4 cup chopped spinach
  • 2 tablespoons diced bell pepper (any color)
  • 1 ounce low-fat feta cheese, crumbled
  • 1 teaspoon olive oil or cooking spray
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil or spray cooking spray in a non-stick skillet over medium heat.
  2. Pour the egg whites into the skillet. Let them set slightly, then gently scramble them until almost cooked through.
  3. Add the chopped spinach and diced bell pepper to the egg whites. Cook for one minute until the vegetables soften slightly.
  4. Remove the skillet from the heat. Stir in the crumbled feta cheese, salt, and pepper.
