Description

Delicious and easy turkey meatballs with hidden vegetables, perfect for picky eaters.


Ingredients

  • 1 pound ground turkey
  • 1/2 cup finely grated zucchini (about 1 small zucchini)
  • 1/4 cup finely grated carrot (about 1 small carrot)
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine all ingredients.
  3. Mix gently until just combined. Do not overmix.
  4. Roll the mixture into 1-inch meatballs.
  5. Place meatballs on the prepared baking sheet.
  6. Bake for 18-20 minutes, or until cooked through and no longer pink in the center.
  7. Serve warm with your favorite sauce or sides.
