- 1 pound ground turkey
- 1/2 cup finely grated zucchini (about 1 small zucchini)
- 1/4 cup finely grated carrot (about 1 small carrot)
- 1/4 cup breadcrumbs
- 1 egg
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine all ingredients.
- Mix gently until just combined. Do not overmix.
- Roll the mixture into 1-inch meatballs.
- Place meatballs on the prepared baking sheet.
- Bake for 18-20 minutes, or until cooked through and no longer pink in the center.
- Serve warm with your favorite sauce or sides.
Notes
- You can substitute other finely grated vegetables like bell pepper or spinach.
- These meatballs can be frozen cooked or uncooked.
