A hearty three-bean chili that’s perfect for a comforting meal. You can make it spicy or mild to suit your taste.

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 bell peppers (any color), chopped
- 2 cloves garlic, minced
- 1 pound ground beef or turkey (optional)
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (10 ounce) can Rotel tomatoes and green chilies, undrained (mild or hot)
- 1 cup beef or vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and bell peppers and cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- If using, add ground meat and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Stir in diced tomatoes, kidney beans, black beans, pinto beans, Rotel tomatoes, and broth.
- Add chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir to combine.
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 2 hours, stirring occasionally. The longer it simmers, the more the flavors will meld.
- Season with salt and black pepper to taste.
- Serve hot with your favorite toppings like shredded cheese, sour cream, or chopped cilantro.
Notes
- For a milder chili, omit the cayenne pepper and use mild Rotel.
- For a spicier chili, add more cayenne pepper or use hot Rotel.
- This chili freezes well.
