Description

A hearty three-bean chili that’s perfect for a comforting meal. You can make it spicy or mild to suit your taste.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 bell peppers (any color), chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey (optional)
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (10 ounce) can Rotel tomatoes and green chilies, undrained (mild or hot)
  • 1 cup beef or vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and bell peppers and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. If using, add ground meat and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. Stir in diced tomatoes, kidney beans, black beans, pinto beans, Rotel tomatoes, and broth.
  5. Add chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir to combine.
  6. Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 2 hours, stirring occasionally. The longer it simmers, the more the flavors will meld.
  7. Season with salt and black pepper to taste.
  8. Serve hot with your favorite toppings like shredded cheese, sour cream, or chopped cilantro.

Notes

  • For a milder chili, omit the cayenne pepper and use mild Rotel.
  • For a spicier chili, add more cayenne pepper or use hot Rotel.
