Description

A warm and encouraging recipe for a Creamy One-Pot Ground Turkey and Spinach Pasta Skillet, designed for quick, family-friendly weeknight dinners. This dish transforms your kitchen into a place of joy and connection.

Ingredients

Scale
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken or vegetable broth
  • 8 ounces pasta (such as penne or rotini)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream (or half-and-half)
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain excess fat if necessary.
  2. Add chopped onion to the skillet and cook until softened, about 3 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the diced tomatoes (with their juice) and broth. Add the pasta, Italian seasoning, salt, and pepper. Stir well.
  4. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is cooked through and most of the liquid is absorbed.
  5. Stir in the heavy cream until the sauce is creamy.
  6. Fold in the fresh spinach. Cook until the spinach wilts, about 1-2 minutes.
  7. Remove the skillet from the heat. Stir in the grated Parmesan cheese until melted and fully incorporated. Serve immediately.

Notes

  • This recipe minimizes cleanup by using just one pot.
  • Feel free to substitute spinach with kale or add other vegetables like mushrooms or bell peppers during the onion cooking stage.
  • Adjust the amount of broth if you prefer a thinner or thicker sauce when the pasta is done cooking.
  • Liam suggests adding a pinch of red pepper flakes if you want a little spice!
