- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup grated zucchini, squeezed dry
- 1 cup grilled corn kernels
- 1/4 cup chopped fresh chives or green onions
- 2 large eggs, lightly beaten
- 1/2 cup milk
- 2 tablespoons melted butter or olive oil
- Oil for frying
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and pepper.
- Add the grated zucchini, corn kernels, and chives to the dry ingredients and stir to combine.
- In a separate bowl, whisk together the eggs, milk, and melted butter or oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat a little oil in a large skillet over medium heat.
- Drop spoonfuls of batter into the hot skillet, flattening slightly with the back of a spoon.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Remove from the skillet and place on a wire rack to drain any excess oil.
- Serve warm with your favorite dip.
Notes
- Make sure to squeeze as much moisture as possible out of the grated zucchini to prevent soggy fritters.
- You can use fresh or frozen corn. If using frozen, thaw and pat dry before adding to the batter.
- These fritters can be made ahead of time and reheated in a toaster oven or skillet.
