Description

Easy and delicious grilled corn and zucchini fritters that kids love, perfect for busy parents.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated zucchini, squeezed dry
  • 1 cup grilled corn kernels
  • 1/4 cup chopped fresh chives or green onions
  • 2 large eggs, lightly beaten
  • 1/2 cup milk
  • 2 tablespoons melted butter or olive oil
  • Oil for frying

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  2. Add the grated zucchini, corn kernels, and chives to the dry ingredients and stir to combine.
  3. In a separate bowl, whisk together the eggs, milk, and melted butter or oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Heat a little oil in a large skillet over medium heat.
  6. Drop spoonfuls of batter into the hot skillet, flattening slightly with the back of a spoon.
  7. Cook for 3-4 minutes per side, or until golden brown and cooked through.
  8. Remove from the skillet and place on a wire rack to drain any excess oil.
  9. Serve warm with your favorite dip.

Notes

  • Make sure to squeeze as much moisture as possible out of the grated zucchini to prevent soggy fritters.
  • You can use fresh or frozen corn. If using frozen, thaw and pat dry before adding to the batter.
  • These fritters can be made ahead of time and reheated in a toaster oven or skillet.
