Description

A traditional Greek spinach and feta cheese pie with layers of flaky phyllo dough. This recipe brings joy and connection to your kitchen.

Ingredients

Scale
  • 1 pound fresh spinach, washed and chopped
  • 1 large onion, finely chopped
  • 4 green onions, thinly sliced
  • 1/2 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 8 ounces feta cheese, crumbled
  • 4 large eggs, lightly beaten
  • 1/4 teaspoon nutmeg
  • Salt and black pepper to taste
  • 1 package (16 ounces) phyllo dough, thawed
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the chopped spinach to the skillet. Cook until wilted, stirring occasionally. Drain any excess liquid from the spinach.
  4. Remove the skillet from heat. Stir in the green onions, dill, parsley, crumbled feta cheese, beaten eggs, nutmeg, salt, and pepper. Mix well to combine.
  5. Unroll the phyllo dough. Keep it covered with a damp cloth to prevent it from drying out.
  6. Brush a 9×13 inch baking dish with melted butter.
  7. Lay one sheet of phyllo dough in the dish, brushing it with melted butter. Repeat this process with about 8-10 sheets of phyllo dough, creating a bottom crust.
  8. Spread the spinach and feta mixture evenly over the phyllo crust.
  9. Layer the remaining phyllo dough sheets over the filling, brushing each layer with melted butter. Fold the edges of the top phyllo sheets under the bottom crust to seal.
  10. Score the top of the pie into serving portions.
  11. Bake for 40-50 minutes, or until the phyllo is golden brown and crispy.
  12. Let the spanakopita cool for at least 15 minutes before slicing and serving.

Notes

  • Ensure your phyllo dough is completely thawed before use.
  • Drain the spinach very well to prevent a soggy pie.
  • You can add a pinch of cayenne pepper for a little heat.
  • Serve warm or at room temperature.
