Instructions
- In a medium bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, oregano, salt, pepper, thyme, and red pepper flakes to create the marinade.
- Place the chicken pieces in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are fully coated.
- Refrigerate and marinate for at least 2 hours, or up to 8 hours for best flavor and tenderness.
- Preheat your grill to medium-high heat (about 400 degrees F) or preheat your oven to 400 degrees F (200 degrees C).
- If grilling: Lightly oil the grates. Remove chicken from the marinade, letting excess drip off. Grill for 6-8 minutes per side, until the internal temperature reaches 165 degrees F (74 degrees C).
- If baking: Arrange the chicken in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C).
- Let the chicken rest for 5 minutes before slicing and serving.
Notes
- For extra flavor, add the zest of one lemon to the marinade mixture.
- If using chicken breasts, pound them to an even thickness before marinating to promote even cooking.
