- 1 cup whole milk ricotta cheese, drained for 30 minutes
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Zest of 2 large lemons
- 2 tablespoons fresh lemon juice
- 1 3/4 cups gluten-free all-purpose flour blend (with xanthan gum)
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup powdered sugar (for glaze)
- 1 tablespoon fresh lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, mix the drained ricotta cheese and granulated sugar until smooth.
- Beat in the egg, vanilla extract, lemon zest, and lemon juice until combined.
- In a separate bowl, whisk together the gluten-free flour blend, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. The dough will be soft.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12 to 15 minutes, or until the edges are lightly golden and the centers are set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, prepare the glaze: Whisk the powdered sugar and 1 tablespoon of lemon juice until smooth. Add more lemon juice, a few drops at a time, if needed to reach a drizzling consistency.
- Drizzle the glaze over the cooled cookies. Allow the glaze to set before serving.
Notes
- Drain the ricotta cheese in a fine-mesh sieve lined with cheesecloth or a coffee filter for at least 30 minutes to remove excess moisture. This prevents overly flat cookies.
- If your gluten-free flour blend does not contain xanthan gum, add 1/2 teaspoon to the dry ingredients.
- For a stronger lemon flavor, you can add 1 teaspoon of lemon extract along with the vanilla.
