Description
A simple recipe for making moist, bite-sized donut holes that are completely gluten-free and feature bright lemon flavor with poppy seeds.

- 1 1/2 cups gluten-free all-purpose flour blend (with xanthan gum)
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon poppy seeds
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup melted unsalted butter or oil
- 1 large egg
- 1 teaspoon vanilla extract
- Zest of 1 large lemon
- 2 tablespoons fresh lemon juice
- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease a mini muffin pan or line it with paper liners.
- In a large bowl, whisk together the gluten-free flour blend, granulated sugar, baking powder, salt, and poppy seeds.
- In a separate medium bowl, whisk together the milk, melted butter or oil, egg, vanilla extract, lemon zest, and lemon juice.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
- Spoon the batter into the prepared mini muffin pan cups, filling each about two-thirds full.
- Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
- Let the donut holes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- To make the glaze, whisk together the powdered sugar and 2 tablespoons of lemon juice until smooth.
- Dip the top of each cooled donut hole into the glaze, or drizzle the glaze over them. Let the glaze set before serving.
Notes
- Use a gluten-free flour blend that already contains xanthan gum for the best texture.
- For extra moisture, you can substitute sour cream or plain yogurt for half of the milk.
- If you prefer a simple dusting instead of a glaze, toss the warm donut holes in a mixture of granulated sugar and extra lemon zest.
