Description

Create a stunning Glistening Champagne Jelly with Berries, a perfect, show-stopping dessert for your next fancy celebration, especially New Year’s Eve. This recipe brings gourmet elegance with a playful spirit.


Ingredients

  • 1 bottle (750ml) Dry Champagne or Sparkling Wine
  • 1/2 cup Granulated Sugar
  • 2 packages (1/4 oz each) Unflavored Gelatin Powder
  • 1/2 cup Cold Water
  • 2 cups Mixed Fresh Berries (strawberries, raspberries, blueberries)
  • Optional: Edible gold dust for garnish

Instructions

  1. Pour the cold water into a small bowl and sprinkle the gelatin powder evenly over the top. Let it sit for 5 to 10 minutes to bloom.
  2. In a medium saucepan, gently warm about 1 cup of the Champagne with the sugar over low heat. Stir until the sugar completely dissolves. Do not boil the mixture.
  3. Remove the saucepan from the heat. Whisk in the bloomed gelatin mixture until it is fully dissolved and no granules remain.
  4. Pour the dissolved gelatin mixture back into the remaining cold Champagne in the bottle or a large pitcher. Stir gently to combine, being careful not to create too much foam.
  5. Arrange half of your mixed berries in the bottom of your desired serving mold or individual glasses.
  6. Slowly pour half of the Champagne jelly mixture over the berries. Refrigerate for about 45 minutes, or until the jelly is partially set (slightly sticky but not firm).
  7. Arrange the remaining berries over the partially set layer. Gently pour the remaining Champagne jelly mixture over the top.
  8. Cover the mold or glasses and refrigerate for at least 4 hours, or preferably overnight, until the jelly is completely firm and glistening.
  9. To serve, unmold if necessary, or serve directly in the glasses. Dust lightly with edible gold dust for extra sparkle, if you wish.

Notes

  • Use a good quality sparkling wine; the flavor transfers directly to the jelly.
  • If you prefer a less alcoholic dessert, substitute half the Champagne with white grape juice before adding the gelatin.
  • For an extra smooth set, gently warm 1/2 cup of the Champagne instead of using cold water to bloom the gelatin, then add the remaining cold Champagne later.
