Description

Start your Christmas morning with a burst of festive flavor! These Gingerbread Pancakes are infused with warm spices and served with a delightful spiced maple syrup. They’re a fun and delicious way to bring holiday cheer to your breakfast table.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Spiced Maple Syrup:
  • 1 cup maple syrup
  • 1/4 teaspoon ground cinnamon
  • Pinch of ground ginger
  • Pinch of ground nutmeg

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour about 1/4 cup of batter for each pancake onto the hot griddle.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. While the pancakes are cooking, gently warm the maple syrup in a small saucepan over low heat. Stir in the cinnamon, ginger, and nutmeg.
  8. Serve the gingerbread pancakes warm, drizzled with the spiced maple syrup.

Notes

  • For fluffier pancakes, let the batter rest for 5-10 minutes before cooking.
  • You can add a tablespoon of molasses to the batter for a deeper gingerbread flavor.
  • Adjust the spices in the syrup to your preference.
