- 3 Ripe mashed bananas
- 1/2 cup Unsalted butter, melted
- 1/2 cup Brown sugar, packed
- 1 Large egg
- 1 teaspoon Vanilla extract
- 1 3/4 cups All-purpose flour
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 2 teaspoons Ground ginger
- 1 teaspoon Ground cinnamon
- 1/2 teaspoon Ground cloves
- 1/4 teaspoon Ground nutmeg
- 1/4 cup Molasses
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, mix the mashed bananas, melted butter, brown sugar, egg, and vanilla extract until just combined.
- In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing until barely blended. Do not overmix.
- Stir in the molasses until it creates swirls in the batter.
- Pour the batter into your prepared loaf pan.
- Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
- For an extra touch of fun, sprinkle coarse sugar on top before baking.
- If your bananas are not very ripe, add one extra tablespoon of molasses for moisture.
