Description

Ingredients

  • 3 Ripe mashed bananas
  • 1/2 cup Unsalted butter, melted
  • 1/2 cup Brown sugar, packed
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 1 3/4 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground cloves
  • 1/4 teaspoon Ground nutmeg
  • 1/4 cup Molasses

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, brown sugar, egg, and vanilla extract until just combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until barely blended. Do not overmix.
  5. Stir in the molasses until it creates swirls in the batter.
  6. Pour the batter into your prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • For an extra touch of fun, sprinkle coarse sugar on top before baking.
  • If your bananas are not very ripe, add one extra tablespoon of molasses for moisture.
  • This bread tastes even better the next day.
