  • 1 (5-6 pound) Prime Rib Roast, bone-in or boneless
  • 4 tablespoons olive oil
  • 8 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon onion powder

Instructions

  1. Remove the prime rib from the refrigerator 2 hours before cooking to allow it to come to room temperature.
  2. Preheat your oven to 450 degrees F (232 degrees C).
  3. In a small bowl, combine the minced garlic, rosemary, thyme, kosher salt, black pepper, and onion powder with the olive oil to create a paste.
  4. Pat the roast dry with paper towels. Rub the garlic herb paste evenly over the entire surface of the roast.
  5. Place the roast, fat side up, in a roasting pan on a rack.
  6. Roast at 450 degrees F for 15 minutes.
  7. Reduce the oven temperature to 325 degrees F (163 degrees C). Continue roasting until an internal thermometer reads 125 degrees F (52 degrees C) for rare, or 130 degrees F (54 degrees C) for medium-rare. This usually takes about 13-15 minutes per pound.
  8. Remove the roast from the oven. Tent it loosely with foil. Let the roast rest for at least 20 minutes before carving. The internal temperature will rise during resting.
  9. Slice and serve your masterpiece.
