- 1/2 cup boiling water
- 1/2 cup unsweetened cocoa powder
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
- Place the pitted dates in a heatproof bowl and pour the boiling water over them. Let them soak for 10 minutes to soften completely.
- Drain most of the water, reserving about 2 tablespoons. Transfer the softened dates and the reserved water to a food processor or high-speed blender. Process until a smooth, thick paste forms.
- Add the cocoa powder, melted coconut oil, eggs, vanilla extract, baking powder, and salt to the food processor. Blend until the batter is completely smooth and uniform. Scrape down the sides as needed.
- Pour the batter into the prepared baking pan and spread evenly. Sprinkle the chocolate chips over the top, if using.
- Bake for 20 to 25 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist, fudgy crumbs attached, not wet batter.
- Let the brownies cool completely in the pan on a wire rack. Cooling is essential for the fudgy texture to set.
- Once cool, use the parchment paper overhang to lift the brownies out and slice them into squares.

- Using Medjool dates yields the best, sweetest, and fudgiest result because they are naturally softer.
- If your dates are not soft enough after soaking, microwave them for 15 seconds before blending.
