Description

Frozen Yogurt Breakfast Bark is a cool and healthy summer breakfast treat for kids, made with yogurt, granola, and fruit.


Ingredients

Scale
  • 2 cups plain or vanilla Greek yogurt
  • 1/4 cup honey or maple syrup (optional, adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 cup granola
  • 1/2 cup mixed berries (such as strawberries, blueberries, raspberries), chopped if large
  • Other toppings: mini chocolate chips, chopped nuts, shredded coconut, other fruits

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the yogurt, honey or maple syrup (if using), and vanilla extract until smooth.
  3. Pour the yogurt mixture onto the prepared baking sheet and spread it into an even layer, about 1/4 inch thick.
  4. Sprinkle the granola, berries, and any other desired toppings evenly over the yogurt.
  5. Place the baking sheet in the freezer for at least 2-3 hours, or until the yogurt is completely frozen and solid.
  6. Once frozen, break the bark into pieces of various sizes.
  7. Store the frozen yogurt bark in an airtight container in the freezer.

Notes

  • Greek yogurt works best for a thicker bark, but you can use regular yogurt. The freezing time may vary.
  • Customize the toppings based on your child’s preferences.
  • This bark can be a bit messy as it thaws, so it’s best enjoyed right from the freezer.
