Description
This French Onion Soup recipe brings warmth and comfort to your table. Rich, savory broth is topped with perfectly caramelized onions, a thick slice of crusty bread, and a generous layer of bubbly, crispy Gruyere cheese. It’s a classic dish that’s perfect for a cozy evening.
Ingredients
Scale
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 large yellow onions, thinly sliced
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup dry white wine
- 8 cups beef broth
- 1 teaspoon fresh thyme leaves
- 1 bay leaf
- 4 slices crusty bread (like baguette or sourdough)
- 1 clove garlic, halved
- 1 cup shredded Gruyere cheese
Instructions
- In a large pot or Dutch oven, melt butter with olive oil over medium heat. Add sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are deeply caramelized and golden brown, about 30-40 minutes.
- Pour in the white wine and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes.
- Add beef broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer, covered, for at least 30 minutes to allow flavors to meld. Remove bay leaf.
- While the soup simmers, toast the bread slices. Rub one side of each slice with the cut side of the garlic clove.
- Place bread slices on a baking sheet and top each with shredded Gruyere cheese. Broil for 1-2 minutes, or until cheese is melted and bubbly and edges are golden brown. Watch carefully to prevent burning.
- Ladle the hot soup into oven-safe bowls. Top each bowl with a crispy Gruyere crouton.
Notes
- For an even richer flavor, you can use a combination of beef and chicken broth.
- If you don’t have oven-safe bowls, you can toast the bread and melt the cheese separately and place the crouton on top just before serving.
- A pinch of nutmeg can add a subtle warmth to the soup.
