Description

Make fluffy, delicious coconut flour pancakes that are perfect for your gluten-free, keto, or paleo lifestyle. This easy recipe brings joy back to your breakfast routine.

Ingredients

Scale
  • 1/2 cup coconut flour
  • 4 large eggs
  • 1/4 cup unsweetened almond milk (or preferred low-carb milk)
  • 1 tablespoon melted coconut oil or butter
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon erythritol or preferred low-carb sweetener (optional)
  • Pinch of salt

Instructions

  1. Whisk the dry ingredients (coconut flour, baking powder, sweetener if using, and salt) together in a medium bowl.
  2. In a separate bowl, whisk the eggs until well combined.
  3. Add the almond milk, melted coconut oil, and vanilla extract to the eggs. Mix well.
  4. Gradually add the dry mixture to the wet ingredients, whisking constantly until just combined. Do not overmix. The batter will be thick. Let it rest for 5 minutes to fully absorb the liquid.
  5. Heat a non-stick griddle or skillet over medium-low heat. Lightly grease the surface.
  6. Portion the batter onto the griddle, using about 2 tablespoons per pancake. You may need to gently spread the batter slightly as it will not spread much on its own.
  7. Cook for 3 to 4 minutes on the first side, or until bubbles appear and the edges look set.
  8. Flip carefully and cook for another 2 to 3 minutes until golden brown and cooked through.
  9. Serve immediately with your favorite toppings.

Notes

  • Coconut flour absorbs liquid quickly; the batter will be thick. If it seems too dry after resting, add an extra splash (1 teaspoon) of milk.
  • Cook on medium-low heat. Coconut flour burns easily if the heat is too high.
  • For extra richness, separate the eggs, whisk the yolks with the wet ingredients, and then whip the egg whites to soft peaks before gently folding them into the final batter.
  • This recipe is naturally grain-free and low-carb.
