Instructions
- Preheat your oven to 425°F (220°C). Butter and lightly dust six 4-ounce ramekins with cocoa powder. Place the ramekins on a baking sheet.
- In a heatproof bowl set over a saucepan of simmering water, melt the butter and chopped chocolate together. Stir until smooth. Remove from heat and let it cool slightly.
- In a separate large bowl, whisk together the whole eggs, egg yolks, granulated sugar, vanilla extract, and salt until well combined and slightly lighter in color.
- Gradually whisk the slightly cooled chocolate mixture into the egg mixture until fully incorporated and smooth.
- Divide the batter evenly among the prepared ramekins.
- Bake for 12-14 minutes, or until the edges are set but the center is still soft and slightly jiggly.
- Let the ramekins cool for about 1 minute. Carefully invert each ramekin onto a serving plate. The lava cake should slide out easily. If it sticks, gently run a knife around the edge.
- Serve immediately, dusting with additional cocoa powder if desired.
