  • 4 large egg yolks
  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Cocoa powder, for dusting

Instructions

  1. Preheat your oven to 425°F (220°C). Butter and lightly dust six 4-ounce ramekins with cocoa powder. Place the ramekins on a baking sheet.
  2. In a heatproof bowl set over a saucepan of simmering water, melt the butter and chopped chocolate together. Stir until smooth. Remove from heat and let it cool slightly.
  3. In a separate large bowl, whisk together the whole eggs, egg yolks, granulated sugar, vanilla extract, and salt until well combined and slightly lighter in color.
  4. Gradually whisk the slightly cooled chocolate mixture into the egg mixture until fully incorporated and smooth.
  5. Divide the batter evenly among the prepared ramekins.
  6. Bake for 12-14 minutes, or until the edges are set but the center is still soft and slightly jiggly.
  7. Let the ramekins cool for about 1 minute. Carefully invert each ramekin onto a serving plate. The lava cake should slide out easily. If it sticks, gently run a knife around the edge.
  8. Serve immediately, dusting with additional cocoa powder if desired.
