- 12 large jalapeños
- 8 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped green onion
- 1/4 teaspoon garlic powder
- Pinch of salt
- 12 small strips of red bell pepper (for the hat brim)
- 12 small pieces of cream cheese or pimento (for the pom-pom)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Slice the jalapeños in half lengthwise. Carefully remove the seeds and white membranes. Wear gloves if you have sensitive skin.
- In a small bowl, mix the softened cream cheese, cheddar cheese, green onion, garlic powder, and salt until well combined. This is your filling.
- Spoon or pipe the cheese mixture evenly into each jalapeño half. Do not overfill.
- Place a thin strip of red bell pepper at the wide, open end of each stuffed half to form the brim of the elf hat.
- Place the filled jalapeños on the prepared baking sheet.
- Bake for 20 to 25 minutes, or until the peppers are tender and the cheese is bubbly.
- Remove from the oven. While still warm, gently press a small piece of cream cheese or pimento onto the pointed tip of each popper to create the hat’s pom-pom.
- Serve warm and enjoy the festive fun.
Notes
- Wear gloves when handling jalapeños to avoid skin irritation.
- For a crispier result, you can wrap the filled halves in half a slice of bacon before baking.
- If you prefer less heat, make sure you remove all the white membrane and seeds from the peppers.
